Freezer Breakfast Sandwiches
Description
Freezer Breakfast Sandwiches are made by pressing turkey breakfast sausage flat on a baking sheet and baking until browned. Meanwhile, eggs beaten with milk and optional salt and pepper are baked in a separate pan until set. Both are cut into 24 equal squares. English muffins are split and each sandwich is layered with sausage, egg, a slice of American cheese, and optionally tomato slices, then wrapped individually and frozen.
The texture and flavor combine savory sausage and creamy eggs with melty cheese inside a soft English muffin. Baking the sausage and eggs in pans saves time and avoids stovetop cooking. This method yields a uniform shape for sandwiches that toast or microwave evenly.
To reheat, remove a sandwich from the freezer package, wrap it in a paper towel, and microwave first on defrost then on high to warm through. Thawing overnight in the fridge before microwaving is also recommended to improve texture. These sandwiches are ideal for batch preparation, freezer storage, and quick weekday breakfasts.
The recipe makes 24 sandwiches suitable for freezing and convenient daily use.
Ingredients
Makes 24 Sandwiches for freezing!
- 24 English muffins I found these at Costco, Fiber One brand
- 2 ounce tubes turkey breakfast sausage (Jennie-O)
- 9 egg
- 9 egg white
- 1 cup milk
- salt optional
- black pepper optional
- 24 cheese we used 2% milk American Flavored Kraft Singles - 45 calories per slice, slices
- tomato optional, sliced
Instructions
- Preheat oven to 375 degrees. Press the turkey sausage flat until it is completely covering the bottom of a 13x18 baking sheet. Bake for about 15 minutes. The sausage will pull from the sides and it should look browned.
- While the sausage is baking beat together the eggs and milk, I like to add a little salt and pepper to the eggs but this is optional.
- Pour the eggs in to another 13x18 baking sheet, that has been lined with cooking spray. Carefully place the eggs in the oven and bake for 15 minutes, or until the eggs are no longer runny.
- Cut the sausage and eggs in to 24 equal squares.
- Open an english muffin and add a slice of sausage, egg, and cheese to each one.
- Put each completed sandwich into a sandwich baggie and freeze. I put all the sandwiches into a cardboard box in my freezer to help prevent freezer burn.
- When ready to eat, remove from freezer and plastic baggie, wrap in a paper towel, and microwave for 1 min 30 seconds on defrost (30%) then turn over and microwave on high for another 1 to 1.5 minutes. (I like to throw one in the fridge the night before so it thaws overnight, then just microwave on high for 1 min 30 seconds).
- I sometimes like to add a slice of tomato to my sandwich for added flavor.
Notes
- Thaw frozen sandwiches overnight in the refrigerator before microwaving for best texture.
- When reheating, wrap the sandwich in a paper towel and microwave first at 30% power for 1.5 minutes, then flip and microwave on high for 1 to 1.5 minutes.
- Use sandwich bags and store sandwiches in a cardboard box in the freezer to help prevent freezer burn.
