Freezer Breakfast Sandwiches

These Freezer Breakfast Sandwiches are made by baking an egg, milk, cheddar, salt, and pepper mixture into a casserole, then cutting it into squares. The sandwiches assemble by layering the baked egg squares, cheese, cooked bacon or meat of choice, and English muffin halves. They can be eaten immediately or frozen individually for convenient reheating later. The method produces a protein-rich breakfast that can be prepped in advance and heated quickly for busy mornings.

Description

The recipe bakes eggs whisked with milk, shredded cheddar, salt, and pepper in a greased pan until just set, then cools and cuts the baked eggs into 12 squares. Each sandwich is made by placing an egg square along with cheese and cooked bacon (or sausage, ham, Canadian bacon) on an English muffin half, topped with the other muffin half. This combination yields a handheld meal featuring a fluffy, cheesy egg layer and savory meat inside the bread.

For immediate consumption, sandwiches can be reheated in the oven until the cheese melts. For longer storage, each sandwich is wrapped individually and frozen for up to a month. Reheating involves thawing overnight in the fridge or quicker microwave thawing before heating thoroughly in the microwave to warm and melt cheese. This system allows easy preparation and balanced breakfasts ready to eat when time is limited.

The sandwiches pair well with fruit or a morning beverage and suit meal prepping for workdays or busy family schedules. Using different breakfast meats or cheeses can vary flavors. English muffins provide a sturdy but soft base that holds fillings well.

Ingredients

Servings
  • 12 egg
  • ¼ cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper ground
  • ½ cup cheddar cheese shredded
  • 12 lices Bacon sausage patties, ham, or Canadian bacon, cooked
  • 12 English Muffin
  • 12 lices cheddar cheese or your favorite cheese

Instructions

  1. Preheat the oven to 325 degrees Fahrenheit. Generously grease a 9x13 inch pan and set aside.
  2. In a large bowl whisk the eggs, milk, shredded cheddar, salt and pepper.
  3. Pour the egg mixture into the greased pan and bake for 18-22 minutes, or just until the center is set. Don’t over-cook.
  4. Remove from the oven and allow to cool before cutting into 12 squares.
  5. Top each English muffin half with egg, cheese, meat, and the other half of the muffin. If you are consuming right away, heat the sandwiches in the oven at 350 degrees Fahrenheit for about 5 minutes or until the cheese melts.

To Freeze:

  1. Wrap each sandwich individually in tinfoil, wax paper, or parchment paper and place them in a freezer safe resealable bag. Freeze for up to 1 month.

To reheat:

  1. Thaw in the fridge overnight, for best results. Remove paper and wrap the sandwich in a paper towel. Microwave for 40 seconds - 1 minute on defrost (or 50% power). Flip the sandwich oven and microwave for 10-30 seconds on high power, until warmed through.
  2. You can also reheat the sandwiches in the oven at 350 degrees Fahrenheit for about 10-15 minutes, or in the toaster oven.
