French Bread Pizzas
Description
This recipe uses a hardy granary French bread stick sliced into quarters and halved lengthwise to provide a sturdy base. Tomato puree is applied as a sauce substitute, and a variety of sliced fresh vegetables add flavor, moisture, and texture. Mature cheddar provides a sharp cheese topping that melts pleasantly under the grill alongside the vegetables.
Sprinkling ground black pepper and dried oregano adds seasoning and aroma. The grilling step both melts the cheese and slightly chars the edges of the bread and veggies, enhancing taste and texture.
The recipe notes suggest this as a flexible way to use up leftover vegetables and cheese. Bread insides can be scooped out to reduce calories and add more veggies. Flavor can be boosted with BBQ or hot sauce mixed into the tomato puree, red chili flakes for heat, or fresh basil added after cooking. Involving children in assembling the pizzas is encouraged.
