Ingredients

  • 4 russet potatoes large
  • vegetable oil for frying
  • salt to taste

Instructions

  1. Peel potatoes and cut them into 1/4-inch thick sticks.
  2. Place cut potatoes in a bowl of cold water for 30 minutes to remove excess starch.
  3. Heat oil to 300°F (150°C) in your deep fryer or pot.
  4. Drain and pat dry the potatoes with paper towels.
  5. Fry the potato sticks in batches for 5 minutes or until they're soft and pale.
  6. Remove and drain on paper towels.
  7. Heat oil to 375°F (190°C).
  8. Fry the pre-cooked fries in batches for about 3-4 minutes or until golden brown.
  9. Immediately season with salt.
