  • 3 tablespoons butter or use olive oil
  • 4 medium chicken breast boneless, skinless
  • 1 medium yellow onion diced or sliced
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon thyme dried
  • 2 ounces French onion soup mix Or use 2 tablespoons of homemade or all-natural French Onion seasoning
  • 1 cup beef broth
  • 3/4 cup gruyere cheese grated
  • thyme garnish, optional, fresh

Instructions

  1. In the skillet add 2 tablespoons of butter, once the butter is melted add the chicken breast, sear until browned on each side, about 3-4 minutes per side.
  2. Remove the chicken from the skillet, add the rest of the butter, add the chopped onion and cook until the onion is softened and caramelized.
  3. Add all the spices, onion soup mix, and broth to the skillet over low heat and mix to combine everything.
  4. Return the chicken to the French onion sauce, bring to a boil. Cover and reduce heat, and simmer for 12 minutes.
  5. Uncover, top the chicken breasts with cheese, cover again and cook another 3 to 5 minutes until the cheese had melted or place oven safe pan under the broiler for 2 minutes until cheese is melted and bubbly.
  6. Serve hot, garnish with fresh thyme if desired, serve over rice, or mashed potatoes.
