French Onion Chicken Skillet Recipe
Description
This recipe starts by searing boneless, skinless chicken breasts in butter or olive oil until golden brown, locking in moisture and flavor. Onions are then sautéed and caramelized in the same skillet, building a sweet, deep flavor base. Adding French onion soup mix and beef broth creates a robust, savory sauce infused with dried onion seasoning and herbs.
The chicken is returned to the sauce and simmered covered for about 12 minutes to ensure thorough cooking and allow the flavors to meld. After simmering, gruyere cheese is sprinkled on the chicken and melted either covered on the stove or briefly under a broiler, forming a golden, bubbly topping that complements the savory onion sauce. Fresh thyme can be added as garnish for a herbal note.
This skillet meal pairs well with rice or mashed potatoes to soak up the flavorful sauce, making it a hearty and comforting main course. Variations can include using Swiss, provolone, or mozzarella cheese if gruyere is unavailable.
Additional methods include making the dish in an Instant Pot or crockpot with similar flavor layering, and creating homemade onion soup mix with dried onion flakes and spices for a natural seasoning blend. The recipe offers flexibility with cooking techniques and ingredients depending on preferences and available equipment.
Ingredients
- 3 tablespoons butter or use olive oil
- 4 medium chicken breast boneless, skinless
- 1 medium yellow onion diced or sliced
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon thyme dried
- 2 ounces French onion soup mix Or use 2 tablespoons of homemade or all-natural French Onion seasoning
- 1 cup beef broth
- 3/4 cup gruyere cheese grated
- thyme garnish, optional, fresh
Instructions
- In the skillet add 2 tablespoons of butter, once the butter is melted add the chicken breast, sear until browned on each side, about 3-4 minutes per side.
- Remove the chicken from the skillet, add the rest of the butter, add the chopped onion and cook until the onion is softened and caramelized.
- Add all the spices, onion soup mix, and broth to the skillet over low heat and mix to combine everything.
- Return the chicken to the French onion sauce, bring to a boil. Cover and reduce heat, and simmer for 12 minutes.
- Uncover, top the chicken breasts with cheese, cover again and cook another 3 to 5 minutes until the cheese had melted or place oven safe pan under the broiler for 2 minutes until cheese is melted and bubbly.
- Serve hot, garnish with fresh thyme if desired, serve over rice, or mashed potatoes.
Notes
- Substitute gruyere cheese with Swiss, provolone, or mozzarella if gruyere is not available.
- For homemade onion soup mix, combine dried onion flakes, beef bouillon, onion powder, parsley flakes, celery seed, paprika, and black pepper to taste.
- Chicken can be browned in an Instant Pot on sauté mode before pressure cooking with onions and broth for about 10 minutes; then add cheese and finish under the broiler or in the oven.
- A crockpot variation involves layering chicken breasts and onions, adding onion soup mix and broth, and cooking on high for 4 hours or low for 8 hours before topping with cheese and briefly broiling.
