French Onion Dip

French Onion Dip features slow-caramelized yellow onions cooked in butter and oil with cayenne and seasoning, blended into a creamy mix of cream cheese, sour cream, and mayonnaise. The result is a rich, flavorful dip with browned, sweet onion notes and a smooth, tangy base. It works well as a companion to potato chips or fresh vegetables.

Description

The recipe begins by caramelizing thinly sliced yellow onions with butter and vegetable oil over medium to low heat until deeply browned and sweet, enhanced with a pinch of cayenne and seasoning. Cooling the onions prevents overheating of the dairy when blended later.

After caramelization, the onions are combined in a food processor with softened cream cheese, sour cream, and mayonnaise, yielding a balanced creamy texture and tangy flavor. The dip is seasoned to taste with salt and pepper.

Garnished optionally with fresh chives, this dip pairs traditionally with potato chips as a snack or appetizer. It can be made a couple of days in advance to allow flavors to meld, and leftovers keep well refrigerated for up to four days.

Ingredients

Servings
  • 4 tablespoons butter (1/2 stick)
  • 1/4 cup vegetable oil
  • 2 large onion peeled, halved, and sliced into 1/8-inch slices (about 3 cups, see note 1, yellow
  • 1/4 teaspoon cayenne pepper
  • salt freshly ground
  • black pepper freshly ground
  • 4 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • chive for garnish, optional, fresh
  • potato chips for serving

Instructions

  1. In a large saucepan pan over medium-high heat, melt butter and oil together until shimmering. Add onions, cayenne, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until onions have softened, about 10 minutes.
  2. Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized. Cool completely (spreading the onions in a thin layer on a baking sheet will speed up this process).
  3. In a food processor, add cooled onions, cream cheese, sour cream, and mayonnaise. Pulse until combined, then season to taste with salt and pepper. Garnish with fresh chives and serve with potato chips.

Notes

  • Yellow onions are preferred for caramelizing due to their natural sweetness and flavor balance.
  • Store leftover dip covered in the refrigerator for up to 4 days to maintain freshness.
  • Prepare the dip up to 2 days ahead and stir well before serving.
  • Allow caramelized onions to cool completely before blending with dairy to maintain smooth texture.
