French Onion Pork Loin

French Onion Pork Loin is a roasted pork loin flavored and roasted alongside vegetables tossed in French onion soup seasoning. The pork is seasoned with black pepper and onion soup mix, giving it a savory crust, while the vegetables absorb the seasoning and olive oil for a tender, aromatic accompaniment. This roast offers a balanced meal option with hearty root vegetables and juicy pork.

Description

This dish centers on roasting a pork loin at 350 degrees surrounded by baby carrots, parsnips, baby potatoes, and white onion, all tossed with olive oil and French onion soup seasoning. The pork is rubbed with olive oil, black pepper, and the same onion soup seasoning, creating a flavorful, savory exterior. Using a rimmed baking sheet lined with foil helps with easy roasting and cleanup.

The meat cooks until it reaches an internal temperature of 145 degrees, ensuring juiciness while fully cooked. Roasting the vegetables simultaneously infuses them with layered onion and herb notes, complementing the pork. Resting after cooking allows the juices to redistribute, resulting in tender slices and well-cooked vegetables.

This roast can be served as a straightforward dinner, requiring minimal separate sides since the vegetables cook alongside and absorb flavorful seasonings. Measuring the pork weight or seasoning amount can help replicate the flavor intensity noted.
