French Palmier Cookies
Description
These French Palmier Cookies start with a sheet of puff pastry sprinkled on both sides with a sugar and salt mixture, which is gently rolled into the dough to embed the sugar. The dough is then tightly rolled from each edge toward the center, forming a palm-shaped log. Chilling the dough firm before slicing helps produce evenly shaped cookies that hold their form while baking.
The cookies are baked until golden brown, developing crisp, caramelized edges and a flaky, buttery interior from the layered puff pastry. The combination ensures a crunchy texture with a balanced sweetness from the sugar coating.
The recipe recommends defrosting the puff pastry until soft but still cold to maintain pastry layers and avoid melting fats prematurely. Palmiers can be enjoyed plain or alongside tea or coffee as a delicate, sweet biscuit.

- Pinch salt

- Use a rolling pin to gently roll the pastry, pressing the sugar mixture into the dough.
- Tightly roll one edge of the pastry to the center. Then tightly roll the other edge up until they meet in the center.
- Once the two sides have been rolled up, lightly press them together.
- Wrap the roll in glad wrap and place it in the freezer for 30 minutes or in the refrigerator for 1 hour.Preheat the oven to 425°F/220°C.
- Use a sharp paring knife to cut the pastry into ½ inch wide slices and place them on the lined baking sheet with at least 2"/5cm between them.
- Bake the palmiers for 10-12 minutes until golden brown. Then, use a metal spatula or palette knife to flip the cookies carefully and bake for another 4-6 minutes.
- Transfer to a cooling rack and allow to cool completely.
Notes
- Defrost puff pastry until pliable but cold to preserve the pastry’s layers.
- Rolling the sugar into the dough helps create a crunchy sugar crust on the cookies.
- Chilling the rolled dough before slicing keeps cookies firm and prevents unrolling during baking.
- Space cookies well on the baking sheet as they expand while baking.
