Instructions

  1. Line an 18x13 baking sheet with parchment paper.
  2. Mix the sugar and salt in a small bowl.½ cup / 115 g granulated sugarPinch salt
  3. Sprinkle half of the sugar and salt mixture onto your counter, roughly the same size as your pastry sheet.
  4. Put the puff pastry on top of the sugar and sprinkle the remaining sugar on top.1 sheet puff pastry
  5. Use a rolling pin to gently roll the pastry, pressing the sugar mixture into the dough.
  6. Tightly roll one edge of the pastry to the center. Then tightly roll the other edge up until they meet in the center.
  7. Once the two sides have been rolled up, lightly press them together.
  8. Wrap the roll in glad wrap and place it in the freezer for 30 minutes or in the refrigerator for 1 hour.Preheat the oven to 425°F/220°C.
  9. Use a sharp paring knife to cut the pastry into ½ inch wide slices and place them on the lined baking sheet with at least 2"/5cm between them.
  10. Bake the palmiers for 10-12 minutes until golden brown. Then, use a metal spatula or palette knife to flip the cookies carefully and bake for another 4-6 minutes.
  11. Transfer to a cooling rack and allow to cool completely.
