French Toast Bake with Cinnamon Streusel

This French Toast Bake with Cinnamon Streusel features thick slices of cinnamon, brioche, Texas, or French bread cut into cubes soaked in a custard of eggs, milk, cream, sugar, and vanilla. It's topped with a cinnamon-spiced streusel made from flour, brown sugar, cinnamon, and butter before baking until golden and set. The dish delivers a soft, creamy interior with a sweet, crumbly topping suited for breakfast or brunch.

Description

The recipe calls for about one medium-size loaf of bread with a soft crumb. The bread is cubed and soaked in a mixture of eggs, milk, heavy cream, sugar, and vanilla to form a rich custard base. After refrigeration to allow absorption, a cinnamon streusel topping made of flour, brown sugar, cinnamon, salt, and melted butter is sprinkled over the top. Baking at 350°F for about an hour produces a baked French toast casserole with a firm yet tender texture and a sweet, crumbly cinnamon topping. The recipe suggests trimming any thick, hard crust from the bread before cubing.

Serve this bake warm, optionally dusted with powdered sugar and syrup. It pairs well with fresh berries for added brightness.

Notes specify that about 18 to 20 ounces of bread is needed, and the type of bread can vary depending on preference, holding up to the soaking and baking process.

Ingredients

Servings

French Toast:

  • 10 to 12 to 12 thick slices French bread see note
  • 10 to 12 to 12 thick slices cinnamon bread
  • 10 to 12 to 12 thick slices brioche bread
  • 10 to 12 to 12 thick slices Texas toast
  • 5 large egg
  • ¾ cup milk
  • ¾ cup heavy cream
  • ⅓ to ½ to ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • table salt pinch

Cinnamon Streusel:

  • ½ cup all-purpose flour
  • ½ cup light brown sugar packed
  • ½ teaspoon ground cinnamon
  • teaspoon salt
  • 4 tablespoons butter melted
  • fresh berries for serving, optional
  • powdered sugar
  • syrup

Instructions

  1. Lightly grease a 9X13-inch baking pan. Cut the bread into 1-inch cubes (more or less; it doesn't have to be exact). You'll want about 8 to 9 cups of lightly packed bread cubes. Scatter the bread cubes in the prepared pan. They won't necessarily be in a single layer, but they should be evenly distributed.
  2. Blend or whisk together the eggs, milk, heavy cream, sugar, vanilla and salt. Pour the mixture evenly over the bread.
  3. Cover the dish and refrigerate at least 4 hours or up to 12 hours.
  4. For the streusel, in a small bowl, stir together the flour, brown sugar, cinnamon and salt. Add the melted butter and stir until the butter and dry ingredients are evenly mixed and small clumps form. Refrigerate until ready to bake the French toast.
  5. Preheat the oven to 350 degrees F.
  6. Sprinkle the streusel evenly across the top of the French toast. Bake, uncovered, for 55 to 60 minutes (more or less, depending on how "well done" you want the French toast). If the topping starts to brown too quickly while baking, place foil loosely across the top of the pan and continue baking until the French toast is done to your liking.
  7. Serve warm with fresh berries, a sprinkle of powdered sugar and/or a drizzle of syrup.

Notes

  • Use approximately one medium-sized loaf (18-20 ounces) for this recipe.
  • Remove thick or hard crusts before cubing if desired for softer texture.
  • Serve warm with powdered sugar, syrup, or fresh berries as preferred.
