French Toast Casserole
Description
The recipe calls for cubing a loaf of French bread and placing it in a greased baking dish. A batter combining eggs, milk, Greek yogurt, maple syrup, cinnamon, vanilla extract, and salt is poured evenly over the bread to soak thoroughly. Chopped pecans are scattered on top and drizzled with additional maple syrup for sweetness and texture.
Baked at 350°F for 40 to 50 minutes, the casserole sets so the inside is custardy and the top develops a gentle crispness. Covering loosely with foil towards the end of baking prevents overbrowning and drying out. Cooling briefly before serving allows flavors to meld and texture to firm slightly.
This casserole offers a convenient make-ahead breakfast or brunch option that combines creamy, spiced custard with hearty bread and nutty crunch. Maple syrup can be served alongside for extra sweetness.
Leftovers keep refrigerated up to 3-4 days and reheat well in the oven to regain some crispness, though the microwave option is faster for individual servings. The batter can be mixed up to 24 hours in advance, and the full dish can be preassembled if using thick crusty bread that holds soaking well. Nuts can be substituted or omitted to suit preferences.
Ingredients
- 1 loaf French bread cut into 1-inch cubes
- 8 egg beaten
- 2 cups milk
- 1 cup Greek yogurt
- ¼ cup maple syrup plus more for drizzling
- 1 ½ teaspoons cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ cup pecans chopped
Instructions
- Preheat the oven to 350°F and grease a 13x9-inch baking dish
- Place the bread cubes in the greased baking dish; set aside.
- In a large bowl, combine eggs, milk, Greek yogurt, maple syrup, cinnamon, vanilla and salt. Pour evenly over the bread cubes. Use a spoon to carefully coat all the bread cubes with the batter.
- Top the french toast with the chopped pecans. Then drizzle more maple syrup over the pecans.
- Bake in the preheated oven for 40-50 minutes, or until a knife inserted in the center comes out clean. If the top starts browning too quickly, loosely cover with foil for the last 10 minutes to prevent the casserole from drying out.
- Let stand for 5 minutes to cool. Serve with maple syrup if desired.
Notes
- Store leftovers in an airtight container in the refrigerator for 3-4 days.
- Reheat individual servings in the microwave, or reheat the entire casserole in the oven at 350°F for 10 minutes to restore the crisp topping.
- Batter can be prepared up to 24 hours ahead to save time on baking day.
- Using thick, crusty bread allows the casserole to be assembled in advance without becoming too soggy.
- Nuts can be omitted or swapped for alternative types if desired.
