French Toast Muffins
Description
French Toast Muffins begin by chopping bread into small pieces, which absorb a custard mixture made from eggs, milk, sugar, vanilla extract, and ground cinnamon. Using stale or a variety of breads can affect the flavor subtly and help with soaking. The soaked bread is divided into muffin tins, topped with cinnamon sugar, then baked until golden brown at 350°F (175°C) for about 15-20 minutes.
This method yields muffins with a softly set interior and a slightly crisp top layer from the cinnamon sugar sprinkled before baking. Serving options include maple syrup, butter, or powdered sugar to enhance the sweet and spiced flavors.
These muffins offer a portable and visually appealing way to enjoy French toast without the need for pan-frying, making them suitable for breakfast or brunch occasions.
Ingredients
- 1/2 loaf bread (about 10 slices plus one heel) cut into chunks -You could use old stale bread. You could also use different types of bread for different flavors.
- 4 egg
- 1 1/2 cups milk
- 4 tbsp sugar (divided in half)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
Instructions
- Chop up the bread into bit size pieces. Set aside.
- Spray 12 muffins tins with non stick spray.
- In a large bow mix together half the sugar, milk, eggs, and extract.
- Mix in the bread in the bowl. Use your hands and get dirty.
- In a separate bowl add 2 tablespoons sugar and 1 teaspoon cinnamon. Mix well.
- Spoon half of the wet bread into the 12 muffin cups
- Top with 1/2 teaspoon cinnamon sugar mixture.
- Spoon remaining wet bread into the 12 muffin cups and top with 1/2 teaspoon cinnamon sugar mixture.
- Bake in a preheated oven at 350 degrees for about 15 - 20 minutes or until golden brown.
- Serve with syrup, butter, powdered sugar, or any other of your favorite toppings.
Notes
- Using stale bread is recommended for better custard absorption, but fresh bread works as well.
- Feel free to experiment with different types of bread for variety in flavor and texture.
- Serve the muffins warm with syrup, butter, or powdered sugar as toppings.
