Ingredients

  • 1/2 loaf bread (about 10 slices plus one heel) cut into chunks -You could use old stale bread. You could also use different types of bread for different flavors.
  • 4 egg
  • 1 1/2 cups milk
  • 4 tbsp sugar (divided in half)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Instructions

  1. Chop up the bread into bit size pieces. Set aside.
  2. Spray 12 muffins tins with non stick spray.
  3. In a large bow mix together half the sugar, milk, eggs, and extract.
  4. Mix in the bread in the bowl. Use your hands and get dirty.
  5. In a separate bowl add 2 tablespoons sugar and 1 teaspoon cinnamon. Mix well.
  6. Spoon half of the wet bread into the 12 muffin cups
  7. Top with 1/2 teaspoon cinnamon sugar mixture.
  8. Spoon remaining wet bread into the 12 muffin cups and top with 1/2 teaspoon cinnamon sugar mixture.
  9. Bake in a preheated oven at 350 degrees for about 15 - 20 minutes or until golden brown.
  10. Serve with syrup, butter, powdered sugar, or any other of your favorite toppings.

Notes

  • Using stale bread is recommended for better custard absorption, but fresh bread works as well.
  • Feel free to experiment with different types of bread for variety in flavor and texture.
  • Serve the muffins warm with syrup, butter, or powdered sugar as toppings.
