Fresh Green Bean Casserole
Description
This recipe begins with boiling fresh green beans until tender but still firm, then cooling them in ice water to preserve texture. The beans are mixed with condensed cream of mushroom soup, milk, soy sauce, and pepper to create a creamy sauce. Part of the fried onions is stirred into the mixture for added flavor and texture.
The casserole bakes uncovered at 350°F, allowing the sauce to bubble and thicken. Additional fried onions are sprinkled on top during the last few minutes of baking to crisp and brown, providing a contrast in texture. The result is a rich, savory side combining fresh vegetable bite with creamy and crispy elements.
This dish pairs well with roasted meats and holiday meals, offering a fresh take on a classic comfort food side. Preparing the casserole ahead saves time, and it can be refrigerated or frozen before baking. Leftovers reheat well, with an optional broiler step to re-crisp the onions.
Ingredients
- 1 (10.5-ounce) can cream of mushroom soup Campbell’s® brand, condensed
- ½ cup milk
- 1 teaspoon soy sauce
- dash black pepper
- 4 cups green beans cut into 1 -1½ inch pieces, cooked
- 1⅓ cups fried onions divided, French's® brand
Instructions
- Preheat the oven to 350° F.
- Bring a pot of water to a boil. Once boiling add the cut green beans and cook for 6-7 minutes. Use a slotted spoon to place in ice water, then drain and pat the green beans dry.
- Add the soup, milk, soy sauce, pepper, cooked beans, and ⅔ cup of the onions to a 1½-quart casserole (8x8 pan) and stir.
- Bake, uncovered, for 25 minutes or until hot and bubbling. Give the mixture a stir and sprinkle the rest of the onions evenly over the top.
- Bake uncovered for another 5 minutes until the onions are golden brown.
Notes
- Prepare the casserole a day ahead, but add fried onions just before baking to retain crispness.
- Freeze the assembled casserole wrapped tightly for up to 3 months; thaw in refrigerator before baking.
- Store leftovers in airtight containers; refrigerate up to 3 days or freeze for 2 months.
- Reheat in microwave or oven; use broiler briefly to restore fried onion crispness on top.
