  • 2 lbs Green bean trimmed and cut in half or thirds, fresh
  • 4 cups cream of mushroom soup homemade
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper fresh ground
  • 3-4 leaves sage minced, fresh
  • 12-14 oz fried onions French's brand

Instructions

  1. Pre-heat oven to 400°, set rack to middle of oven, and put a large pot of salted water to boil.
  2. If using pre-made soup that's been stored in the fridge. Add soup to a medium saucepan to warm.
  3. Once water comes to a boil, add beans. Boil beans for 5 minutes and then drain.
  4. Add beans to a pan and sprinkle salt, pepper, and minced sage on top.
  5. Mix warmed soup in with the green beans so that it is all well incorporated.
  6. Sprinkle in some of the French's Fried Onions and give another mix. Or just top green beans and mushrooms with all of the fried onions.
  7. Bake in oven for 10-15 minutes or until onions begin to brown.

Notes

  • Frozen green beans can be used when fresh are unavailable; thaw before use for best texture.
  • Homemade cream of mushroom soup is preferred but canned soup diluted with water is acceptable.
  • French's fried onions should be stored in an airtight container and added to the casserole just before baking.
  • The casserole can be assembled up to two days ahead; add onions and bake when ready to serve.
  • Blanched green beans can be refrigerated for up to three days or frozen for up to six months.
