Fresh Green Bean Salad

Fresh Green Bean Salad combines crisp green beans with cherry tomatoes, thinly sliced red onions, crumbled feta cheese, and toasted almonds. Tossed in a tangy dressing of olive oil, red wine vinegar, and Dijon mustard, this salad offers a balance of crunchy, creamy, and bright flavors, making it a refreshing side dish or light lunch option.

Description

Fresh Green Bean Salad begins by cooking green beans with a pinch of baking soda to maintain their bright color and tender-crisp texture. Cooling them in an ice bath preserves their crunch and color. The salad includes halved cherry tomatoes and thin red onion slices to add sweetness and sharpness, while crumbled feta provides acidity and creaminess. Toasted almonds add a nutty crunch.

The dressing, made from olive oil, red wine vinegar, Dijon mustard, salt, and pepper, ties the salad together with a tangy and slightly spicy flavor profile. Marinating the salad allows the flavors to meld well without softening the beans.

This salad works well as a side dish for grilled meats or a light vegetarian meal. The recipe's notes advise cutting longer beans for easier eating and describe toasting almonds either on a stovetop or in the oven to bring out their flavor.

Ingredients

Servings
  • 1 pound green beans trimmed
  • ½ teaspoon baking soda
  • 2 cups cherry tomato halved
  • ¼ cup red onion thinly sliced
  • ¼ cup feta cheese crumbled
  • ¼ cup almonds chopped and toasted

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • salt
  • black pepper

Instructions

  1. Bring water and baking soda to a rolling boil. Cook green beans 4- 5 minutes or until tender crisp. Drain beans and place in an ice bath.
  2. Combine dressing ingredients in a small bowl. Add green beans, tomatoes, and red onion and allow to marinate at least 30 minutes.
  3. Top with feta and almonds just before serving.

Notes

  • Adding baking soda to boiling water helps keep green beans bright without affecting flavor.
  • Cut longer green beans in half for easier eating.
  • Toast almonds by stirring them in a dry skillet over medium heat for 4-6 minutes or bake at 350°F for 7-8 minutes until fragrant and lightly browned.
