Description

Fresh Homemade Mojitos begin by juicing about seven limes to yield approximately one cup of fresh lime juice. Fresh mint leaves are added directly to the lime juice and muddled to release their oils and aroma. White rum and simple syrup—made from equal parts sugar and water boiled until sugar dissolves and then cooled—are combined into the mixture. The drink is then filled with ice and topped off with club soda for fizz, stirred gently to blend.

The cocktail features a bright citrus note from the fresh lime juice balanced by the cool, herbal mint aroma, with sweetness tuned by the simple syrup. Ingredients

  • 7 lime approx. 1 cup fresh lime juice
  • ½ cup mint leaves
  • ¾ cup simple syrup or to taste, recipe below
  • 1 cup white rum
  • club soda
  • ice

Instructions

  1. Juice the limes into a 2L jug (I use this juicer for this recipe and tons of other recipes! Great tool to have.)
  2. Add the mint and muddle/squish really well to release the flavors of the mint.
  3. Add 1 cup of rum drink and ¾ cup of simple syrup or more to taste (recipe below).
  4. Fill the jug with ice (mine was 2L), top with Club Soda & stir.

SIMPLE SYRUP

  1. Bring 1 cup of sugar and 1 cup of water to a boil. Stir until sugar has dissolved. Cool and store in the fridge. (I keep mine in a clean creamer container).
