Fresh Rosemary Simple Syrup for Cocktails (and more!)

This Fresh Rosemary Simple Syrup is made by simmering sugar, water, and fresh rosemary sprigs until the sugar dissolves and the herb's aroma infuses the liquid. After a resting period to deepen flavor, the syrup is strained and refrigerated. It lends a subtle herbal note to cocktails and other beverages, sweetening them with a fragrant twist from rosemary.

Description

The recipe involves simmering equal parts sugar and water with several sprigs of fresh rosemary until the sugar dissolves and the rosemary flavor infuses the syrup. Allowing the syrup to rest for up to an hour off heat enhances the herbal intensity. After straining, it is stored in an airtight container in the refrigerator, where it remains usable for 3-4 weeks if properly handled.

This rosemary-infused simple syrup can be used in cocktails to add both sweetness and a piney, aromatic note or in other drinks and culinary applications requiring a touch of flavored sweetness.

To maintain quality, store the syrup in a clean glass jar and avoid contamination that might promote mold growth. If mold appears, discard the syrup and prepare a fresh batch.

Ingredients

Servings
  • 1 cup granulated sugar
  • 1 cup water
  • 6-8 rosemary approximately 5 inches each, sprigs

Instructions

  1. In a small saucepan, bring sugar, water, and rosemary springs to a simmer until sugar is dissolved, then simmer for one to two additional minutes. Remove from heat and let sit for 30 minutes to an hour. The longer it sits the more flavorful it will be!
  2. Strain the liquid into an airtight container to remove any particles and rosemary leaves. Store in an airtight container - like a glass jar - in the fridge. It should last for 3-4 weeks if stored properly.

Notes

  • Yield is about 1.5 cups of syrup; use as needed in cocktails and beverages.
  • Store in a clean, airtight glass container in the refrigerator for up to 3-4 weeks.
  • Do not add water or other liquids to extend the syrup, as this promotes mold and spoilage.
  • If mold forms, discard syrup and prepare a new batch to ensure safety.
