Ingredients

  • 2 cream cheese softened, 8 ounce blocks
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup Parmesan Cheese shredded
  • 1 cup mozzarella cheese shredded, smoked
  • 2 tablespoons olive oil
  • 1 spinach fresh, 6 ounce bag
  • 2 garlic minced, cloves
  • 1/2 onion chopped, or shallot
  • 8 lices Bacon fried and crumbled
  • 1 artichokes drained, marinated, 12 ounce canned

Instructions

  1. Preheat oven to 400 degrees F.
  2. Heat a skillet on medium heat, and add olive oil. Add spinach, garlic and shallots, stirring until spinach is wilted and cooked down. Set aside.
  3. In a large bowl, combine cream cheese, mayonnaise, and sour cream. Beat with an electric hand mixer until smooth. Fold in 1/2 cup parmesan cheese, 1/2 cup mozzarella cheese, spinach, artichokes, and crumbled bacon. Pour into a baking dish and top with remaining cheese.
  4. Bake at 400 for 20 minutes. Serve with bread, chips, and crackers.
