  • 1 2/3 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • ½ cup vegetable oil
  • cup sugar granulated white
  • 2 egg beaten, large
  • 2 teaspoons vanilla extract
  • 2 banana mashed, medium
  • 8 ounces strawberry diced small, fresh

Instructions

  1. Preheat oven to 375 degrees F. 
  2. Line a 12-cup muffin pan with paper liners, or grease well. 
  3. In large bowl, sift the flour, baking soda, salt together.
  4. In a large jug, whisk together the oil, sugar, eggs, vanilla and bananas until well blended (will be slightly lumpy). 
  5. Make a well in the dry ingredients, and fold in the wet until just combined. 
  6. Set aside a few pieces of diced strawberry, and carefully fold the rest into the batter, don’t over mix. 
  7. Divide the mixture between the muffin cup (each will be about 2/3 full) Add a strawberry piece to the top of each (optional).
  8. Bake at 375 degrees F for 18 to 20 minutes or until golden brown and muffins spring back when touched lightly with a finger.
  9. Allow muffins to cool or eat warm if you can’t wait.
  10.  Devour.
