Fresh tomato bruschetta

Simple tomato bruschetta with fresh basil is the perfect way to celebrate ripe tomatoes and is a delicious easy lunch or appetizer.

For the fresh tomato topping

  • 500 g (1lb) tomatoes use a variety of tomatoes for added flavor and texture, ripe
  • 1 red onion finely chopped
  • 2 tbsp basil finely chopped, fresh
  • 1 tbsp olive oil
  • 1-2 tsp lemon juice fresh, or balsamic vinegar
  • salt to taste
  • black pepper to taste

For the bruschetta

  • 4-8 lices (depending on size) bread sourdough, baguette, Italian or Tuscan bread all works well, of your choice
  • 3 tbsp olive oil
  • 1 tbsp butter
  • 1 garlic halved, clove

Instructions

  1. To make the tomato mixture, chop the tomatoes and onion then place in a mixing bowl.
  2. Add the basil, olive oil and lemon juice then season to taste and mix well. Allow to stand for 10-20 minutes to allow the tomatoes to release some of their juices.
  3. To make the bruschetta, brush the bread with olive oil and grill in a grill pan (or outdoor BBQ/Grill/Braai) until toasted on both sides.
  4. Remove from the pan and rub with the garlic.
  5. Top the toasted bread with the tomato mixture and serve.
