Fresh Watermelon and Feta Salad

This salad is fresh, healthy, and refreshing. The watermelon mixed with the other fruits pack in some great nutrients and the light dressing will leave you wanting an extra serving!

Ingredients
- 8 cups watermelon about 1 medium watermelon, diced
- 2 Mango peeled, pitted, and diced, large
- 1 ¼ cups strawberry diced
- 1 ½ cups feta cheese crumbled
- ½ cup mint chopped, leaves
Dressing
- ⅓ cup olive oil
- 3 tablespoons lemon juice about 1 ½ lemons, freshly squeezed
- 2 teaspoons salt
- ½ teaspoon black pepper
Instructions
- In a large bowl, add the watermelon, mango, and strawberries. Stir gently.
- Make the dressing by whisking together the olive oil, lemon juice, salt, and pepper in a small bowl. Pour over the fruit and stir until combined.
- Garnish with the mint leaves and feta cheese. Serve immediately.
