Description

This mojito variation starts by pureeing watermelon cubes and straining the juice to reduce pulp. Fresh mint leaves are muddled gently in a pitcher with a small amount of watermelon juice to release their aroma and flavor. The remaining watermelon juice, freshly squeezed lime juice, simple syrup, and white rum are added to the pitcher, which is filled with ice and topped with soda water for effervescence.

The sweetness can be adjusted further with additional simple syrup if desired. Garnishes of lime wedges, mint sprigs, and watermelon slices enhance the presentation and add fresh flavor accents. Serving immediately ensures the best chilled and crisp experience.

  • 6 cups watermelon cubed
  • 1 cup simple syrup
  • 50 mint leaf fresh
  • ¾ cup lime juice approx. 5 limes, fresh
  • 1 cup white rum
  • soda
  • ice

Instructions

  1. Blend watermelon in the blender until pureed. Strain to remove some of the pulp (optional). Measure out 2 cups of the strained watermelon juice.
  2. Place fresh mint in the bottom of a large pitcher. Add a little bit of the watermelon juice and muddle to release the flavors of the mint.
  3. Add remaining watermelon juice, fresh lime juice, ⅔ cup simple syrup, and rum. Fill the entire pitcher with ice. Top with soda.
  4. Adjust sweetness with additional simple syrup if desired. Garnish with additional lime, mint and watermelon slices.
  5. Serve immediately.

Notes

  • Simple syrup is made by boiling equal parts sugar and water until sugar dissolves; cool before using.
