  • 6 lices Bacon chopped
  • 1 small onion diced
  • 6 cups green cabbage core removed, 1-inch pieces, chopped
  • ¼ teaspoon red pepper flakes or to taste, optional
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat a large skillet or cast iron pan over medium heat. Add the chopped bacon and cook until crisp. Remove with a slotted spoon and set aside, leaving the drippings in the pan.
  2. Add chopped onion to the bacon drippings and cook until tender, about 3-4 minutes.
  3. Stir in chopped cabbage and cook for 15-20 minutes or until tender.
  4. Season with chili flakes if using and salt & pepper to taste.
  5. Sprinkle with the cooked bacon and serve.

Notes

  • Cook cabbage in batches if your pan isn't large enough for a full head.
  • Coleslaw mix can be used but cooks faster, about 8-10 minutes.
  • Add garlic, parmesan cheese, or lemon juice/apple cider vinegar to vary flavor.
  • Adding chicken broth while cooking will steam cabbage, speeding cooking and adding flavor.
