Fried Cabbage and Noodles

Fried Cabbage and Noodles is a hearty dish featuring caramelized onions and tender cabbage sautéed together, combined with boiled egg noodles, butter, salt, and pepper. The cabbage softens while absorbing onion flavors, and the noodles add a satisfying, soft texture, making this a comforting side or simple main dish.

Description

This Fried Cabbage and Noodles recipe begins with cooking sliced onions in neutral oil until browned and soft. Next, cabbage strips are added and cooked with a bit of water until tender. The slow sautéing allows the cabbage to develop flavor while picking up the caramelized notes from the onions. Egg noodles are boiled separately until tender and drained.

Once the cabbage is cooked, the heat is turned off and noodles are mixed in with butter, salt, and pepper to meld the flavors and provide richness. The mixture is stirred to coat the noodles and cabbage evenly. This dish offers a gentle sweetness and softness from the cooked cabbage and onions combined with the buttery noodles, suitable as a side to meat or as a vegetarian entrée.

Ingredients

Servings
  • 2 Tbsp neutral cooking oil $0.08, generic cooking oil
  • 1 yellow onion $0.32
  • 8 oz. egg noodles $0.90, wide
  • 1/2 head cabbage $1.28, 4-5 cups, sliced
  • 2 Tbsp butter $0.20
  • salt $0.05, to taste
  • black pepper $0.05, to taste

Instructions

  1. Slice the onion into 1/4-inch wide strips. Add the onion and cooking oil to a large pot. Sauté over medium to medium-high heat until the onions are soft and browned on the edges.
  2. While the onions are sautéing, remove the core from the cabbage and slice it into 1/2-inch wide strips.
  3. Once the onions have caramelized a bit on the edges, add the sliced cabbage to the pot along with a pinch of salt and about 1/4 cup water. Continue to sauté the cabbage until it is tender, about 15 minutes, using the water to help dissolve any browned bits off the bottom of the pot.
  4. While the cabbage is sautéing, bring a pot of water to a boil for the egg noodles. Once boiling, add the noodles, and continue to boil until the noodles are tender (about 7 minutes). Drain the noodles in a colander.
  5. Once the cabbage is tender, turn the heat off. Add the cooked and drained noodles, butter, and a generous amount of salt and pepper to the pot. Stir to combine and allow the residual heat to melt the butter. Taste the cabbage and noodles and add more salt and pepper to taste. Serve warm.
