Fried Cabbage and Sausage
Description
Fried Cabbage and Sausage combines thinly sliced cabbage with slices of kielbasa sausage, sautéed together in olive oil and butter along with diced onion and minced garlic. The cabbage is seasoned with salt, black pepper, smoked paprika, and fresh thyme then cooked until it reduces in volume and develops slightly browned, tender edges. Worcestershire sauce added during cooking lends a savory tang to the dish. The kielbasa rounds brown gently while mingling their smoky flavor with the soft cabbage. Finished with a sprinkle of fresh parsley, this dish offers a harmonious blend of the savory sausage, aromatic herbs, and tender vegetables.
The dish is best cooked in a large pan or cast-iron skillet that allows the cabbage to caramelize rather than steam, preserving a slightly crisp texture. It can be served as a main course or side and pairs well with simple grains or bread. Adjust seasoning while cooking for balanced flavor.
For enhanced flavor, sear the sausage first until browned, remove it, and cook the cabbage in the sausage fat before returning the sausage to the pan. Deglazing with a splash of broth or white wine after searing adds additional depth. Avoid overcooking the cabbage to prevent mushiness and ensure a tender yet somewhat crisp bite.
Ingredients
- 2 tablespoons olive oil
- 1 tablespoon butter unsalted
- 1 small white onion diced
- 4 cloves garlic minced
- 1 cabbage about 2lbs sliced into thin strips, small head
- 1 teaspoon salt
- 1/4 teaspoon black pepper ground
- 1 teaspoon smoked paprika
- 1 teaspoon Worcestershire sauce
- 1 teaspoon thyme chopped, fresh
- 1 lb kielbasa sliced into thin rounds, polska
- 1 tablespoon parsley chopped
Instructions
- Place a large pan over medium-high heat, and add oil and butter, stirring until melted and foamy.
- Add diced onion and cook until soft and transparent, stirring for about 3-4 minutes.
- Add the garlic and cook it while stirring until fragrant and soft, about 2-3 minutes.
- Add cabbage to the pan and toss. Season it with salt, pepper, and smoked paprika.
- Let cabbage reduce by half for about 10 minutes, stirring occasionally.
- Add Worcestershire sauce and fresh thyme. Stir.
- Slice smoked Polska kielbasa into thin rounds and add it to the pan.
- When the cabbage has significantly reduced in volume and has begun to turn tender and slightly translucent, with browned bits, and the Polska kielbasa has slightly browned, the dish is ready to serve.
- Remove from heat and garnish with parsley.
Notes
- Sear the sausage separately first to develop more flavor before cooking the cabbage.
- Use a large pan or cast-iron skillet to allow proper caramelization of cabbage instead of steaming.
- Slice cabbage evenly for consistent cooking.
- Do not overcook cabbage; it should be tender but still retain slight crispness.
- Season progressively while cooking to balance flavors.
- If searing sausage, deglaze with broth or white wine to capture flavorful browned bits before adding cabbage.
