Fried Egg Sandwich

This Fried Egg Sandwich features melted cheddar cheese on sourdough bread, topped with a sunny-side up egg and optionally bacon or ham. The cheese is broiled on bread slices, then combined with the cooked egg and meat to create a layered sandwich with rich flavors and varied textures. It can be enjoyed immediately or briefly reheated in a skillet for a warm, gooey experience.

Description

The Fried Egg Sandwich starts by broiling slices of sourdough bread topped with generous amounts of cheddar cheese until the cheese melts quickly under high heat. Meanwhile, a large egg is fried sunny-side up in olive oil or butter until the whites are fully set but the yolk remains runny. The egg is seasoned with freshly ground salt and black pepper. Optional cooked bacon or ham is added for savory, smoky flavor.

The sandwich is assembled by placing the egg on one cheesy toast slice and topping with bacon or ham if used, then covering with the second cheese toast slice, cheese side down. This layering delivers contrasting textures: crispy bread edges, melty cheese, tender egg whites, and creamy yolk. The sandwich can be eaten immediately or returned to the skillet to warm through if preferred.

Hot sauce can be served alongside or drizzled over the egg for added spice. This sandwich offers a satisfying balance of savory, creamy, and slightly crispy components that work well for breakfast, brunch, or a quick meal.

Ingredients

Servings
  • 2 to 8 thin slices cheddar cheese
  • 2 thick slices sourdough bread
  • olive oil for the skillet, or butter
  • 1 large egg
  • salt freshly ground
  • black pepper freshly ground
  • Bacon optional, or ham; cooked
  • hot sauce for serving, store-bought or homemade

Instructions

  1. Preheat the broiler.
  2. Divvy the cheese between the slices of bread and place them on a baking sheet, cheese-side up. (And yes, 8 slices of cheese is a lot but it's also obscenely good. How much you use is between you and your scale.) Slide the baking sheet under the broiler and keep watch until the cheese melts, which will probably be a matter of seconds and not minutes.
  3. Heat about a teaspoon olive oil or butter in a skillet over medium-high heat. After about 20 seconds, crack the egg into the skillet. Reduce the heat to medium and let the egg sit until the white sets completely. Sprinkle with salt and pepper.
  4. Remove the melted cheese toasts from the broiler and slide onto a plate. Using a spatula, place the egg, sunny-side up, on a slice of cheesy toast. Top with bacon or ham, if desired, then top with the other cheese toast, cheese side down. Eat immediately, employing the hot sauce as desired, or return the sandwich to the skillet, adding more oil or butter if needed, and cook it as you would a grilled cheese sandwich until the bread is golden and crunchy, flipping the sandwich once. Then eat immediately.
