Ingredients

Servings
  • 1 ¼ cup almond flour or panko breadcrumbs
  • 2 egg
  • 18 oz halloumi cheese
  • cup coconut flour or all purpose flour
  • ½ tsp salt
  • 1 tsp smoked paprika
  • 2 tbsp olive oil

Avocado Mayo Dipping Sauce

  • 1 avocado ripe
  • cup mayonnaise
  • ¼ tsp salt

Instructions

  1. Preheat oven to 400°F.
  2. Prepare a baking tray with a piece of parchment paper or sprayed with olive oil.
  3. Slice halloumi into 30 sticks.
  4. Place coconut flour in a small bowl, and mix in the smoked paprika.
  5. Beat one of the eggs and add ½ tsp of salt. You may or may not need the second egg; that’s why it is best to just start with one.
  6. Place the almond flour in another small bowl.
  7. Coat the halloumi sticks first in the coconut flour mixture, then shake them to remove any excess.
  8. Then dip cheese sticks in the beaten egg. Finally, roll them in almond flour until they are well coated.
  9. Place the halloumi sticks onto the baking sheet and drizzle 2 tbsp of olive oil over the top.
  10. Bake for 20–25 minutes or until golden brown.
  11. To make the avocado mayonnaise, just mix the ingredients together and enjoy!

Notes

  • You could make these fries in an Air Fryer; just make sure not to overlap them on the trays. Cook halloumi sticks at 400°F for 8–10 minutes.
