Description
Fried Oyster Mushrooms (Fried Chicken Dupe!) use oyster mushrooms marinated in buttermilk to tenderize and add moisture. The mushrooms are breaded twice by alternating dips in spiced flour and buttermilk, which builds a substantial, flavorful crust. Cooking in a well-oiled air fryer results in even browning and crispiness without deep frying. The spice blend includes garlic, onion, smoked paprika, cumin, salt, and pepper, adding depth to the coating.
The crispy mushrooms offer a satisfying bite with a contrast between crunchy exterior and soft mushroom inside. This preparation works well as a vegan-friendly finger food or snack and can be paired with dipping sauces or as a topping for salads and bowls.
For a vegan substitute of buttermilk, lemon juice or vinegar mixed with plain soy milk is suggested. Using cooking spray can reduce oil use while maintaining crispiness. Basting with oil during air frying enhances browning and texture.
Ingredients
- 2 heaping cups oyster mushrooms 125 g
- 1 cup buttermilk 240 mL, see notes for vegan substitute
- 1 ½ cups all-purpose flour 200 g
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 Tbsp oil 15 mL
Instructions
- Marinate: Preheat air fryer to 375 degrees F (190 C). Clean mushrooms then toss together with buttermilk in a large bowl. Let marinate for 15 minutes.
- Breading: In a large bowl combine flour and spices. Spoon mushrooms out of the buttermilk (save the buttermilk). Dip each mushroom in the flour mixture, shake off excess flour, dip once more in the buttermilk, then once more in the flour (in short: wet > dry > wet > dry).
- Cook: Grease the bottom of your air fry pan well, then place mushrooms in a single layer, leaving space between mushrooms. Cook for 5 minutes, then roughly brush all sides with a little oil to promote browning. Continue cooking 5 to 10 more minutes, until golden brown and crispy.
Notes
- For vegan buttermilk, combine lemon juice with plain soy milk as recommended.
- Spraying mushrooms with cooking spray can reduce the amount of oil while keeping them crispy.
- Applying oil by brushing or spritzing during cooking promotes browning and a crunchy crust.
