Fried Yellow Squash

Fried Yellow Squash features sliced crookneck squash coated in a seasoned batter of flour, egg, and milk, then pan-fried until golden brown and crispy. The batter provides a light crust, while the squash inside cooks to a tender texture. Salt and black pepper are added for seasoning during frying, enhancing the simple flavors.

Description

This recipe involves slicing yellow crookneck squash into discs, dipping them in a batter made from flour, egg, and milk, then frying in hot oil until both sides are crisp and brown. The oil temperature is key to achieving a crunchy exterior without absorbing too much oil. Sprinkling salt and pepper on the slices while frying seasons the dish evenly. After frying, the squash pieces are drained on paper towels to remove excess oil.

Fried Yellow Squash can be served as a side dish or snack. The texture contrasts between the crispy fried batter and the soft squash make it a pleasant complement in various meals.

Ingredients

Servings
  • 3 yellow crookneck squash
  • 1 cup all-purpose flour
  • 1 egg
  • 1 cup milk
  • salt
  • black pepper
  • cooking oil for frying

Instructions

  1. Wash and dry squash, then slice off and discard the ends. Slice the squash into 3/8-inch thick discs and set aside.
  2. In a shallow dish, combine the flour, egg, and milk, whisking with a fork until everything a batter forms.
  3. Heat 1/2-inch of oil in a large skillet until hot enough that a drop of batter sizzles when dropped into the oil to test it (around 350°F).
  4. Dip the squash slices in the batter, turning and lifting with a fork to allow excess batter to drip off.
  5. Lay each battered slice of squash in the hot oil, then sprinkle generously with salt and pepper. Be careful not to crowd the pan.
  6. Cook until golden brown on the bottom, then turn and cook on the other side until both sides are golden brown. Remove the fried squash from the pan using tongs and transfer to a baking sheet or plate lined with paper towel.
  7. Repeat, working in batches, until all the squash is cooked.
