  • vegetable oil for frying

Instructions

  1. Wash the zucchini and slice into 1/4-inch rounds.
  2. Place the beaten eggs in one shallow dish and the cracker crumbs in another.
  3. Dip the zucchini rounds into the egg wash, then coat with cracker crumbs.
  4. Heat the vegetable oil to 350°F in a deep fryer or large pot. Fry the breaded zucchini for 1 to 2 minutes or until golden brown and crispy. Remove the zucchini from the oil with a slotted spoon and drain on a wire rack before serving.

Notes

  • You can replace saltine cracker crumbs with panko crumbs for a different texture.
