Frito Chili Pie
Description
This recipe starts by browning ground beef with onion and garlic, building a base of hearty flavor. Adding kidney beans and a tomato-based mixture seasoned with chili powder, cumin, and other spices creates a thick, richly flavored chili that simmers uncovered to concentrate its taste. Serving the chili hot over crunchy Fritos chips introduces a crisp texture that softens slightly with the heat, complemented by the sharpness of shredded cheddar cheese melted over the top.
Frito Chili Pie is often eaten as a casual meal or snack and can be customized with various toppings such as diced onions, jalapenos, sour cream, or tomatoes to add freshness and heat.
For storage, keep the chili and chips separate to maintain the chips' crunch. Chili can be refrigerated for up to three days or frozen for longer storage. Reheat the chili before serving over fresh chips.
Ingredients
- 1 pound ground beef
- 1 medium onion diced
- 1 clove garlic minced
- 1 ounce Kidney Beans undrained, can
- 1 .5 ounce tomato paste canned
- 1 ounce diced tomatoes with green chilies canned, brand: ROTEL
- 2 tablespoons chili powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon cumin
- 1 .25 ounce Fritos chips in bag
- 1 cup cheddar cheese shredded
Instructions
- In a large skillet or pot, brown the ground beef, onion, and garlic on medium heat. Drain off excess fat.
- Add kidney beans, tomato paste, rotel, chili powder, salt, sugar, and cumin to ground beef. Stir to combine. Turn heat down to medium low. Allow the mixture to simmer uncovered for 20 minutes.
- Pour a bag of fritos onto a serving dish, or pour a single serving of fritos onto each plate or bowl. Serve the chili over fritos , sprinkle with shredded cheddar cheese, and use desired toppings.
Notes
- Optional toppings include diced onions, jalapeño peppers, sour cream, green onions, diced tomatoes, or chopped bell peppers to add flavor and texture.
- Store chili separately from Fritos to prevent chips from becoming soggy; refrigerate chili in an airtight container up to three days or freeze up to three months.
- Reheat chili thoroughly before serving over fresh chips.
