Frito Chili Pie

Frito Chili Pie combines browned ground beef with a flavorful chili made from tomato sauce, canned tomatoes, Rotel, and a blend of spices including cumin, oregano, and chipotle Tabasco. Kidney and pinto beans add texture and heartiness. This chili can be simmered on the stove or slow-cooked in a crockpot, making it flexible for various cooking preferences. It's traditionally served over crunchy Fritos and topped with cheddar cheese and optional garnishes, providing a contrast between the thick chili and crisp chips.

Description

Frito Chili Pie is a classic dish featuring a chili sauce made from lean ground beef, onion, garlic, tomato sauce, diced tomatoes, Rotel, kidney beans, and pinto beans. Seasoned with a mix of cumin, oregano, chili powder, and chipotle Tabasco sauce, the chili delivers a mildly smoky and spicy flavor. The method of preparation allows either stovetop simmering or slow cooking in a crockpot, making it a hands-off dish if preferred. The interplay between the thick, bean-filled chili and crispy Fritos creates a satisfying texture contrast.

The chili pie is finished by layering the chili over a bed of Fritos so they remain crunchy, or the chili may be spooned onto the chips. Cheddar cheese and other toppings such as sour cream or lettuce add additional layers of flavor and texture. It's a filling and casual dish often enjoyed as comfort food.

Tomato sauce in this recipe is simply pureed tomatoes, and if Rotel is unavailable, any canned diced tomatoes with green chiles can be substituted. Using ancho chili powder provides a milder and smokier heat, but regular chili powder or Tabasco can be used depending on taste preferences. The recipe's cooking times refer to the stove preparation method.
