Description
This salad combines corn kernels with diced red and green bell peppers, red onion, and jalapeño peppers or mild green chiles for a fresh and slightly spicy vegetable base. Mayonnaise mixed with chili powder creates a creamy, smoky dressing that binds the ingredients together.

Ingredients
- 3 cups corn kernels fresh off the cob, or two 12-14 ounce cans of corn, drained
- ½ red bell pepper diced ¼-inch
- ½ green bell pepper diced ¼-inch
- ½ red onion diced ¼-inch
- 4 ounces jalapeno pepper drained, or 4 oz mild green chiles drained, diced
- ⅔ cup mayonnaise
- 2 teaspoons chili powder
- 1 ½ cups cheddar cheese shredded
- 5 ounces Fritos chips
Instructions
- Combine all ingredients except Fritos in a large bowl and mix well.
- Just before serving, stir in Fritos.
- Season with salt & pepper to taste.
Notes
- For best texture, add Fritos chips just before serving to keep them crunchy.
