Description

This method freezes ripe avocados to extend shelf life and retain their creamy texture for future use. Whole avocados are wrapped sealed to prevent freezer burn, while halved avocados are brushed with lemon juice on the exposed flesh to reduce browning before wrapping and freezing. For slices or cubes, the avocado flesh is scooped out after removing pits, wiped of any brown spots, cut into desired pieces, and flash frozen separately on a lined baking sheet to prevent clumping before being stored.

Lemon juice adds acidity that slows oxidation, preserving color and flavor in the freezer. Thawing is best done slowly in the refrigerator overnight or quickly in room temperature water. Frozen avocados are well suited for applications like guacamole, smoothies, mousse, ice cream, or smashed avocado toast. They are less ideal in salads due to a change in texture after freezing.

Using ripe avocados is essential since frozen ones will not ripen after thawing. Proper freezer-safe packaging ensures freshness up to several months. Handling quickly after thawing preserves the best texture and color.

  1. First, wash the avocado thoroughly and dry them.

Freezing Whole Avocados or Halves

  1. If freezing whole avocados, simply wrap the avocado tightly with plastic wrap or beeswax paper and then place in the freezer.
  2. If freezing avocado halves, slice the avocado into two halves. Brush each cut side with some lemon juice. Then wrap with plastic wrap or beeswax paper and store in the freezer.

Freezing Avocado Slices or Cubes

  1. If freezing avocado slices or cubes, after you slice them into halves, remove the pits. Then, use a spoon to scoop out the flesh of the avocado. Remove any parts that are brown. Then, use a knife to cut them into thin slices or cubes.
  2. Line a baking sheet with some parchment paper or a silicon mat. Place the avocado slices or cubes, neatly spaced apart from each other, on the baking sheet. Then "flash freeze" the avocado slices for at least an hour. This freezes them as individual pieces (versus placing in a bag straight away which would freeze them into a one massive chunk!)
  3. After an hour or so, place the frozen chunks into a freezer bag or airtight container, remove all air, then place in freezer.

Freezing Mashed Avocado

  1. If freezing mashed avocado, after removing the pit and scooping out the flesh, place it into a bowl or the food processor (after removing brown parts). Then use a fork to mash for chunkier texture or a food processor for smoother texture. Add a tablespoon of lemon juice per avocado before the final pulse or mash. Then portion into individual airtight, freezer proof containers, and then store them in the freezer!
