Description
The recipe combines pineapple juice and coconut cream with a combination of coconut-flavored rum and dark rum, then adds frozen limeade concentrate for a tart, citrusy note. This mixture is frozen overnight in a bucket or large container, with occasional stirring to prevent solid freezing and maintain a scoopable texture.
Before serving, the frozen mixture is loosened by sitting at room temperature briefly and served in glasses that can be rimmed with lime and sugar to add extra flavor and presentation appeal. For a lighter or non-alcoholic version, rum is omitted and the frozen mixture is served with club soda or lemon-lime soda to add gentle bubbles and dilute sweetness. Because alcohol lowers the freezing point, the boozy version remains scoopable while the virgin version freezes more solidly.
This cocktail is ideal for parties or casual gatherings where a large batch of tropical frozen drinks is desired. It is served cold, refreshing, and creamy with distinct pineapple and coconut flavors.
Ingredients
- 48 ounces pineapple juice or tropical juice
- 1 can coconut cream 13-15 ounces
- 12 ounces rum coconut flavored
- 4 ounces dark rum
- 10 ounces limeade concentrate 1 can, frozen
- club soda or Lemon-Lime Soda, optional
Instructions
- Combine all ingredients in a large ice cream pail or another bucket.
- Freeze overnight, stirring after about 4 hours.
- Remove from freezer 15 minutes before serving.
- Run a lime around the edge of a glass and dip in sugar if desired.
- Fill glass with frozen Pina Colada mix & enjoy or fill glass half full of Pina Colada Mix and top with soda or lemon-lime soda.
Notes
- To make a non-alcoholic version, omit rum and serve frozen mix with club soda or lemon-lime soda.
- The non-alcoholic version freezes firmer; freeze in a shallow dish and allow extra time to soften before serving.
- Rub lime around the glass rim and dip in sugar for decorative sweetness.
