Frozen Watermelon Daiquiri
Description
This recipe starts by flash freezing cubed watermelon to create the icy base crucial for the slushy texture of the daiquiri. Mint leaves are muddled with lime juice using a mortar and pestle, releasing essential oils and mixing flavors thoroughly. The frozen watermelon and fresh watermelon cubes blend with the muddled mint-lime juice and light rum into a smooth, chilled drink. Straining the blended mint leaves out provides a clean texture.
The resulting cocktail features the natural sweetness of watermelon balanced by the acidity of lime and the aromatic freshness of mint. Alcohol warmth is tempered by the icy base, making it refreshing on warm days. Serving it in large margarita-style glasses with garnishes enhances its presentation.
For substitutions, bottled lime juice can be used if fresh is unavailable, and light rum is preferred though dark rum suits other cocktails. Without a mortar and pestle, a glass and wooden spoon can serve to muddle the mint and lime. This cocktail works well as a summer or poolside drink.
Ingredients
- 4 cups watermelon divided, cubed
- 1/3 cup rum light
- 2 tablespoons lime juice
- 6 large mint leaves
Garnish

Instructions
- Freeze Watermelon: Add 3 cups of cubed watermelon to a baking tray and flash freeze for 1 hr. Add to a freezer-safe container and freeze for another 3 hours, at least.
- Muddle Lime and Mint: Use a mortar and pestle to muddle mint and lime together by adding mint leaves to the mortar with lime juice and use the pestle to grind mint leaves into the lime juice. See recipe notes if you do not have a mortar and pestle.
- Blend: Add 3 cups of frozen watermelon to the Vitamix or high-powered blender with 1 cup of fresh cubed watermelon. Place a sieve over the top of the blender and pour lime juice into the blender using the sieve to catch the ground mint leaves. Add rum. Blend until all watermelon chunks are blended smooth.
- Serve: Pour into your favorite large margarita style glassware and garnish with watermelon slices and more fresh mint!
Notes
- Fresh or bottled lime juice may be used; fresh is preferable for brighter flavor.
- Light rum is used here; dark rum can be reserved for other cocktails or marinades.
- If you lack a mortar and pestle, muddle lime and mint using a glass and the end of a wooden spoon to release mint oils.
- Fresh mint is best; alternatively, use 1 tablespoon of mint simple syrup and reduce lime juice to 1 tablespoon.
