Description
This Frozen Yogurt Bark starts with Greek yogurt and honey blended together, optionally with whey protein for added protein content. The mixture is spread into a thin layer on parchment paper and topped evenly with chia seeds, fresh sliced strawberries and blueberries, and optionally pistachios or other nuts for texture. It is then frozen until firm enough to break into pieces.
The texture combines the creaminess of yogurt with the crispness of seeds and nuts and the juiciness of fresh fruit. The freezing process results in a firm bark that can be sliced easily with a knife heated under warm water for clean cuts. The honey adds gentle sweetness balancing the tang of yogurt.
The Frozen Yogurt Bark is best kept stored in the freezer in an airtight container or freezer-safe bag, where it can last up to two months. It makes a good make-ahead dessert or snack, ideal for warm days. Variations can include alternative yogurt flavors or vegan options by using plant-based yogurt and sweeteners.
Ingredients

- ⅓ cup Whey Protein Isolate preferably sugar-free. Whey is OPTIONAL but recommended for a high-protein treat. Use a vegan protein powder for a vegan frozen dessert
- 1 teaspoon chia seeds coconut flakes
- 3 strawberries thinly sliced (or raspberries or another fresh fruite)
- ½ cup blueberries or blackberries, or a mixed berries

Instructions
- If adding whey to your frozen yogurk bark, blend it with yogurt and honey in a food processor or blender until the mixture is creamya dn homogeneous. If skipping the whey, simple mix the yogurt with the honey by hand.
- Then, pour the mixture onto a parchment paper-lined baking sheet and spread it to form a single layer.
- Evenly sprinkle the chia seeds on top and arrange the berries and the nuts if using them.
- Transfer the baking sheet to a freezer. When the yogurt bark is completely frozen (3 hours or more), pull up the parchment paper.
- Using a sharp Chef’s knife, cut the bark into pieces (12-15) , and serve immediately. Enjoy! TIP: Before slicing, rinse the knife in warm water and dry well.

- Keep the frozen yogurt bark stored in the freezer only, as it will melt quickly in the fridge.
