Ingredients
- lettuce I use half romaine, half spinach
- spinach I use half romaine, half spinach
- apple about 1, peeled and diced
- strawberry sliced
- avocado diced
- dried cranberries
- green onion sliced
- almonds toasted, sliced
- feta cheese crumbled
Dressing: (makes around 1/2 cup)
- 3 tablespoons orange juice fresh
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 clove garlic
- salt about 1/4 t. salt and fresh cracked pepper
- black pepper about 1/4 t. salt and fresh cracked pepper
Instructions
- For the salad: Arrange all ingredients in a bowl. Measurements are up to you and how much you like of everything.
- For the dressing: Add all ingredients to a blender. Blend until smooth. Dressing can be made ahead of time and stored in the fridge. Toss salad with dressing right before serving to avoid sogginess.
