Fruit Chia Pudding Parfait
Description
The parfait is prepared by combining almond milk, chia seeds, and maple syrup, then letting it sit to allow the chia seeds to swell and form a gel-like pudding with occasional stirring over 30 minutes. The pudding is then alternately layered with sliced almonds and a variety of fresh fruits such as blueberries, strawberries, kiwi, peach, and apple in a glass or jar. Coconut chips add an additional texture and flavor contrast. The layering creates an appealing presentation as well as textural variety.
The resulting parfait has a mildly sweet and nutty flavor from the almonds and coconut, balanced by the fresh, juicy fruit. Ingredients
- 1 cup almond milk or coconut milk
- 4 Tablespoon chia seeds
- 2 Tablespoon maple syrup or honey
- Fruit blueberries, strawberries, kiwi, peach, apple

Instructions
- In a small bowl, combine the almond milk with chia seeds and maple syrup and allow it to sit for about 30 minutes, so it can thicken. Be sure to stir it every 10 minutes or so.
- To assemble: Add a couple of spoonfuls of chia pudding in a small glass or glass jar. Add one-third of the sliced almonds after the pudding. Spoon some fruits on top. Repeat and add another couple spoonfuls of chia pudding, followed by another one-third of sliced almonds and more fruits. Repeat a final time until the glass/jar has been filled.
