Fruit Chia Pudding Parfait

This Fruit Chia Pudding Parfait layers chia seed pudding with maple-sweetened almond milk along with fresh sliced fruits, coconut chips, and sliced almonds. The pudding thickens after sitting, creating a creamy, textured base that contrasts with the crunchy nuts and fresh fruit slices, offering a refreshing and light dessert or snack option.

Description

The parfait is prepared by combining almond milk, chia seeds, and maple syrup, then letting it sit to allow the chia seeds to swell and form a gel-like pudding with occasional stirring over 30 minutes. The pudding is then alternately layered with sliced almonds and a variety of fresh fruits such as blueberries, strawberries, kiwi, peach, and apple in a glass or jar. Coconut chips add an additional texture and flavor contrast. The layering creates an appealing presentation as well as textural variety.

The resulting parfait has a mildly sweet and nutty flavor from the almonds and coconut, balanced by the fresh, juicy fruit. The chia seeds provide a soft, tapioca-like consistency, while the almond milk base keeps the pudding light. This dish can be a healthy snack or breakfast item and is visually decorative.
