Fruit Salsa
Description
This Fruit Salsa blends peeled and diced kiwi and Golden Delicious apples with raspberries and diced strawberries, sweetened by white sugar, brown sugar, and fruit preserves. The mixture is chilled for at least 15 minutes to meld flavors while maintaining fruit texture. To avoid browning and excess juice, it is best prepared shortly before serving.
The salsa is traditionally served with warm cinnamon-sugar coated flour tortilla chips created by coating one side of tortillas with melted butter or cooking spray, sprinkling with a cinnamon-sugar mixture, cutting into wedges, and baking until crisp. Alternatively, cinnamon graham crackers or cinnamon pita chips can be used.
This dish works well as a light dessert or snack that combines fresh fruit and spiced sweetness with crunchy chips providing texture contrast. The cinnamon sugar on the chips enhances the fruit flavors while adding warmth.
Ingredients
- 2 kiwi peeled and diced
- 2 apple Golden Delicious variety, peeled, cored and diced
- 8 ounces raspberry
- 1 (16 oz carton) strawberry diced
- 2 tablespoons white sugar (more or less to taste)
- 1 tablespoon brown sugar (more or less to taste)
- 3 tablespoons fruit preserves any flavor, e.g. strawberry
- 10 (10 inch) flour tortilla or Stacy's cinnamon chips or cinnamon graham crackers
- butter melted or butter flavored cooking spray
Cinnamon sugar:
- 1 cup white sugar
- 2 Tablespoons cinnamon
Instructions
- In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes. This is best made the same day and not too far ahead of time so your apples don't start browning and the fruit gives off so too much juice and it gets runny.. This salsa can also be serve with cinnamon graham grackers or cinnamon pita chips. Best when made and eaten the same day otherwise the
- For the Cinnamon Chips:
- Preheat oven to 350 degrees.
- Coat one side of each flour tortilla with melted butter or butter flavored cooking spray. Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet. Spray again with cooking spray (not necessary if using melted butter).
- Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.
Notes
- Prepare the fruit salsa shortly before serving to prevent apples from browning and excess juice development.
- Cinnamon chips are made by coating tortillas with butter or cooking spray, sprinkling cinnamon-sugar, cutting into wedges, and baking until crisp.
