Fruit Salsa Recipe

Fruity salsa can be served with homemade cinnamon chips or if you want to save some time, use any store bought version.

Ingredients

Servings
  • 2 apple cored, peeled, diced, Granny Smith variety
  • 1 Pint strawberries hulled, diced
  • 2 kiwi peeled, diced
  • orange juice of one small
  • 1 Tablespoon brown sugar
  • 2 Tablespoons jelly I've used sugar-free apricot, strawberry, apple jelly

Cinnamon Tortilla Chips

  • 4-6 tortilla low carb works great
  • 1/2 cup granulated sugar or monk fruit
  • 2 Tablespoons ground cinnamon
  • 1/2 cup butter melted or cooking spray

Instructions

  1. Prepare fruit: dice apples, kiwi, and strawberries and place in a medium size mixing bowl.
  2. Add fresh squeezed orange juice, sweetener, and jam and gently fold the ingredients together. Let juices and flavors blend for a half hour before serving.
  3. Serve with pita or cinnamon chips.

Cinnamon Chips

  1. In a small bowl whisk together sweetener and cinnamon. Set aside.
  2. With a pastry brush coat both sides of a tortilla with melted butter or spray with butter flavored cooking spray.
  3. Sprinkle both sides of tortillas with prepared cinnamon mix.
  4. Cut the tortillas into 8ths.
  5. Place on two baking sheets separating each tortilla chip.
  6. Bake at 375 degrees for 8-10 minutes.

Notes

  • For a low carb version use a brown sugar alternative and sugar free jam or jelly. Also make cinnamon chips with low carb tortillas.
