These Fudgy Chocolate Meringue Cookies are soft and chewy in the middle, with the most delightfully thin and crackly exterior!

Ingredients
- 4 egg large, whites
- 1 c. sugar
- 12 oz. chocolate chips melted gently and cooled to room temperature, semi-sweet
- 1 tsp. vanilla extract pure
- 1.5 c. walnuts finely diced
Instructions
- Preheat oven to 350° F.
- Spray a baking sheet very lightly with non-stick spray and set aside.In the bowl of a stand mixer, beat egg whites, slowly adding in sugar, until mixture forms soft peaks. With a rubber spatula, gently fold in melted, cooled chocolate, vanilla, and nuts. Stir just until combined.
- Drop by spoonful (about 1-1/2 tablespoon in size), 2 inches apart, onto prepared baking sheet.
- Bake for 10 to 11 minutes. Remove from oven and let cool for 2 minutes on baking sheet. Remove to cooling rack to cool completely. These cookies are best on the day they are made.
