Ingredients
- 2 chicken breast cooked and diced
- 1 (8 ounce) spring greens bag
- 1 pint cherry tomato sliced in half
- ½ red onion sliced into rings
- 1 cup pecan halves toasted
- 1 (2.5 ounce) apple chips or you can make your own with this recipe, bag
- 6 ounces feta cheese crumbled
- ½ cup dried cranberries
Dressing Ingredients:
- ⅓ cup olive oil
- 2 tablespoons white balsamic vinegar
- 2 tablespoons apple cider vinegar
- 2-3 garlic finely diced, cloves
- 3 teaspoons Dijon mustard
- 3 tablespoons honey
Instructions
- In a large salad bowl, add 1 (8 ounce) bag spring greens, cooked and diced 2 chicken breasts, 1 pint cherry tomatoes, ½ red onion, 1 cup toasted pecan halves, and 1 (2.5 ounce) bag apple chips. Top with 6 ounces feta cheese and ½ cup dried cranberries.
- In a small bowl, whisk together the ⅓ cup olive oil, 2 tablespoons white balsamic vinegar 2 tablespoons apple cider vinegar, 2-3 garlic cloves, 3 teaspoons Dijon mustard, and 3 tablespoons honey.
- Pour the dressing over the salad and gently toss to coat the salad ingredients.
