Funfetti Cookie Sandwiches are simply made with a boxed cake mix, then filled with buttercream frosting. Perfect for birthdays, parties and celebrations!

Ingredients
For the cookies:
- 1 Pillsbury Funfetti Cake Mix
- 1 large egg
- 4 ounces cream cheese softened
- 1/4 cup unsalted butter melted
- pink food coloring
- 3/4 cup Sprinkles
For the frosting:
- 1/2 cup salted butter room temperature
- 3/4 teaspoon vanilla extract
- 2 cups powdered sugar
- 1/2-2 tablespoons whole milk
- Food Coloring

Instructions
- Preheat the oven to 350ºF. Line a baking sheet with parchment paper.
- In a small bowl, use a hand mixer to mix the cake mix, egg, cream cheese and butter until it is all well combined. Add the pink food coloring if desired. Roll the dough into 1-inch balls. - Roll the balls in sprinkles, then place them on a cookie sheet. Gently press down on the top of the balls to slightly flatten them. 3/4 cup sprinkles
- Bake for 10 minutes. Move the cookies to a wire rack to cool.
- In a stand mixer bowl, with the mixer on medium speed, whip the butter for 2-3 minutes until it is almost white in color. 1/2 cup salted butter
- Add in the powdered sugar, vanilla and 1 1/2 tablespoons milk. Add a drop of food coloring, if desired. - Spread or pipe frosting on half of the cookie. Place another cookie on top of the frosting to make sandwiches. Store in an airtight container at room temperature.
