Description

Gambas Pil Pil is a classic Spanish dish made by gently frying raw king prawns in olive oil with crushed garlic and red chili pepper. The garlic and chili infuse the oil with aroma and heat, which is absorbed by the prawns as they cook and turn pink in about 3 to 4 minutes. Sprinkling chopped fresh parsley at the end provides a fresh herbal finish. The method involves cooking the garlic and chili briefly to release their flavors, then adding prawns and cooking them just until done.

The dish combines the sweetness and firmness of prawns with the savory, slightly spicy oil, making it ideal for dipping. Serving it with warm crusty bread helps make the most of the rich oil left behind, creating a balanced and flavorful appetizer or light meal.

Ingredients

  • 500 g king prawns raw
  • 2 tablespoon olive oil
  • 6 garlic crushed, clove
  • 1 red chili pepper finely chopped
  • 15 g parsley chopped, fresh

Instructions

  1. Add 2 tablespoon Olive oil to a pan and heat until hot. Add 6 Garlic clove and 1 Red chilli and cook for 1 minute, stirring continuously.
  2. Add 500 g Raw king prawns and cook until they have turned pink all over - about 3-4 minutes.
  3. Add 15 g Fresh parsley, stir and serve.

Notes

  • To deepen flavor, add finely chopped fresh red pepper to the oil before cooking the prawns.
  • Sprinkle red chili flakes just before serving to adjust spice level.
  • Serve Gambas Pil Pil with warm crusty bread for dipping into the garlic-chili oil.
  • Do not reheat leftovers, as the prawns are best consumed fresh.
  • Fresh parsley is traditional for garnish, but coriander can be used as an alternative.
