Description
The carrots are peeled and halved lengthwise if large, then tossed in a mixture of honey, olive oil, grated garlic, garam masala, salt, and pepper. Roasting occurs at a high temperature to develop a tender texture and subtle caramelization without becoming mushy.
After about 20 minutes of roasting—turning the carrots midway—they are plated and garnished with chopped pistachios and mint leaves that add contrast in texture and flavor. The garam masala provides aromatic warmth, while honey contributes natural sweetness. Garlic adds a savory dimension.
This dish serves well as a flavorful vegetable side, complementing both casual and more formal meals. The fresh garnish brightens the roasted flavors and adds an extra layer of interest to the dish.
Ingredients
- 1 pound carrot peeled and sliced in half lengthwise if large
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 clove garlic grated
- 2 teaspoons garam masala
- kosher salt fresh ground, to taste
- black pepper fresh ground, to taste
- mint leaves fresh mint leaves and chopped pistachios for topping

Instructions
- Preheat oven to 425° F. and line a baking sheet with parchment paper.
- In a large bowl whisk together the honey, oil, garlic, garam masala, salt and pepper. Toss the carrots in the mixture until they're coated then place them in a single layer on the prepared baking sheet. Sprinkle with a little more salt and pepper.
- Roast the carrots for approximately 20 minutes or until they are tender, but not mushy. Rotate the baking sheet halfway through the cooking time.
- Place the carrots on a serving plate and top them with chopped pistachios and mint.
