Ingredients
- 1 lb cooked chickpeas
- 12 oz spinach (fresh or frozen ), blanched
- 3 cloves garlic , peeled
- 2 slices bread , slightly stale
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- 1 teaspoon paprika
- ½ teaspoon white pepper , freshly ground
- 3 tablespoons tomato puree
- 2 tablespoons apple cider vinegar
- 2 tablespoons water
- ½ cup extra virgin olive oil
- salt

Instructions
- Blanch the spinach in a saucepan filled with boiling water, and cook for 5 minutes if fresh or 15 minutes if frozen.
- Drain and chop.
- In a Dutch oven, heat 3 tablespoons of olive oil and fry the whole garlic cloves. When they begin to brown, remove them and place in the immersion blender beaker or a jug.
- In the same oil, brown the slices of bread until they are golden.
- Reserving the oil, add the bread to the garlic, along with the cumin, ground coriander, paprika, white pepper, tomato puree, vinegar, water, 3 tablespoons of olive oil, and a pinch of salt.
- Blend everything well, and set aside.
- Heat the reserved oil in a large Dutch oven, and add the chopped spinach.
- Sauté for a few minutes before adding the blended paste.
- Mix and again for 2 minutes, stirring to combine the flavors.
- Add the cooked chickpeas and remaining olive oil, and sauté for 10 minutes, stirring gently.
- Taste and adjust the salt if necessary before serving.
