Garlic and Herb Rub Pork Tenderloin

This Garlic and Herb Rub Pork Tenderloin features a flavorful herb blend rubbed into a trimmed pork tenderloin, resulting in a tender and juicy roast with savory notes from rosemary, thyme, oregano, and garlic. The method combines searing and oven roasting to create a browned crust and a perfectly cooked interior with an internal temperature of 145°F.

Description

The recipe applies a dried herb and fresh garlic rub to a cleaned pork tenderloin, pressing the mixture into the meat for good adhesion. The tenderloin is seared in a hot cast-iron skillet with olive oil, turning every few minutes to form a browned crust. After searing, the pork roasts in a preheated 425°F oven, with lemon slices added to the skillet during the final minutes to impart a fresh citrus note.

This cooking technique produces a pork tenderloin that is nicely browned outside while maintaining a juicy, tender interior. The herb combination provides earthy and aromatic flavors, complemented subtly by the acidity from lemon slices, balancing the meat's richness.

The pork is rested covered for 5 minutes after cooking to allow juices to redistribute before slicing. It serves well with sautéed spinach, garlic, or your choice of side dishes for a fleshed-out meal.

The notes mention that pork tenderloins often come in pairs; making a double batch of the herb rub will accommodate cooking both tenderloins together, making it suitable for larger meals or meal prep throughout the week.

Ingredients

Servings
  • 1 ½ pound pork tenderloin , trimmed
  • 1 teaspoon rosemary dried
  • 1 teaspoon thyme dried
  • 1 teaspoon oregano dried
  • ½ teaspoon chili powder
  • ½ teaspoon salt Kosher salt and freshly ground
  • ½ teaspoon black pepper Kosher salt and freshly ground
  • 3 cloves garlic pressed or minced
  • 1 tablespoon olive oil or canola oil

Instructions

  1. Preheat the oven to 425°F.
  2. Trim any extra fat from the pork tenderloin. In a small bowl mix together the herbs, garlic, and salt and pepper. Rub all over the pork, pressing the mixture into the meat so it adheres well.
  3. Heat a large cast-iron skillet on medium-high heat with the oil and place the pork tenderloin in the pan. Cook for 10 minutes, turning every 3 minutes on each side until lightly browned.
  4. Transfer the pork to the oven and cook for 10 minutes. Add the lemon slices to the skillet with the pork and cook for 10 more minutes or until cooked through and the internal temperature of the pork is 145°F.
  5. Remove from the oven, cover with foil, and let stand for 5 minutes. Slice and serve with sautéed spinach and garlic or your favorite side dish.

Notes

  • Pork tenderloins usually come in pairs; prepare double the herb rub if cooking both for larger servings or meal prep.
