Description
For Garlic and Herb Shrimp, shrimp shells are removed and a butterfly cut along the back cleans and opens each piece. This allows marinade ingredients, including garlic, parsley, lemon juice, olive oil, Dijon mustard, salt, and pepper, to coat thoroughly. The shrimp should marinate no longer than 10 minutes to avoid the acidic lemon juice beginning to "cook" the shrimp.

Ingredients
- 1 lb Shrimp 16 to 20 count per pound, jumbo
- 2 Tbsp parsley minced, fresh
- 1 garlic minced, large clove
- 1 tsp Dijon mustard grey poupon
- 1/2 tsp salt
- 1/8 tsp black pepper freshly ground
- 1/8 cup olive oil plus 2 Tbsp
- 2 Tbsp lemon juice
Instructions
- Clean the shrimp, remove the shells. Make a slit down the back of the shrimp and clean well. This will also create the "butterfly" effect. Pat shrimp dry with paper towels.
- Mix together all of the ingredients except the shrimp.
- Add shrimp and coat well with the mixture. Cook within 10 minutes of combining or the lemon juice will start to cook the shrimp.
- In a large saute pan, heat 2 tablespoons olive oil on medium-high heat.
- Add the shrimp and cook about 1 1/2 minutes on each side, or until cooked through.
Notes
- Butterflying shrimp helps the marinade penetrate and ensures even cooking.
- Marinate shrimp no more than 10 minutes to prevent lemon juice from cooking it prematurely.
- Cook shrimp 1½ minutes per side on medium-high heat to keep them tender and prevent rubberiness.
- Residual heat continues cooking shrimp after removing from skillet; remove promptly when done.
