Garlic and Paprika Chicken
Description
This recipe uses chicken drumsticks seasoned with salt and pepper and coated in an olive oil mixture infused with minced garlic, smoked paprika, red pepper flakes, and fresh chopped parsley and oregano. The garlic is gently cooked in the oil with spices to avoid bitterness while releasing flavor. The drumsticks are baked at 425°F in a baking dish until fully cooked and tender.
The garlic and smoked paprika provide a mild heat and smoky aroma, balanced by the fresh herbs. The preparation avoids wetness by patting the chicken dry before seasoning, ensuring a crispier skin and better browning. Baking them for about 45 minutes cooks the meat through while allowing the flavors to meld.
This chicken pairs well with salads or side dishes of choice and is practical for a straightforward baked chicken entrée.
Using a meat thermometer is recommended to ensure internal temperature reaches 165°F for safety. The spice blend also suits other chicken cuts, with similar cooking times and preparation.
Ingredients
- 12 chicken drumstick
- ½ cup olive oil
- 8 cloves garlic minced
- 2 tablespoons smoked paprika
- ½ teaspoon red pepper flakes
- ¼ cup parsley chopped, fresh
- 2 tablespoons oregano chopped, fresh
- ½ teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
Instructions
- Preheat oven to 425°F.
- In a small skillet heat the olive oil. Add the garlic, smoked paprika, red pepper flakes and the herbs. Cook for about 1 minute over medium heat, do not burn the garlic.
- Clean and dry the drumsticks and season with salt and pepper.
- Pour this olive oil mixture over the drumsticks and make sure the drumsticks are coated thoroughly with the olive oil/paprika mixture.
- Place the drumsticks in a 9x13 baking dish and bake for about 45 minutes or until chicken legs are cooked through.
- Serve with your favourite side dish and/or salad.
Notes
- Pat chicken drumsticks dry before seasoning to encourage crisp skin and better browning.
- Cook garlic only for 1 minute in the oil with spices to prevent burning and bitterness.
- Ensure chicken is fully cooked by using a meat thermometer; target temperature is 165°F (74°C).
- If smoked paprika is unavailable, regular paprika can be substituted.
- The spice mixture works well on other chicken parts like breasts or leg quarters with similar cooking times.
- Store cooked chicken in an airtight container in the refrigerator for 3 to 4 days; reheat by microwave or oven as preferred.
