Garlic Brown Butter Roasted Beef Tenderloin

This Garlic Brown Butter Roasted Beef Tenderloin features a tender beef roast seasoned with salt and peppers, seared on all sides, then oven roasted to medium-rare. The finishing is enhanced by a garlic-infused brown butter sauce created by cooking butter with whole garlic cloves until browned. The method produces a beef roast with a flavorful crust and a juicy, evenly cooked interior.

Description

The Garlic Brown Butter Roasted Beef Tenderloin recipe starts with a 5 to 6 pound beef tenderloin which is trimmed to an even thickness using kitchen twine for uniform cooking. The roast is generously seasoned with salt, black pepper, and white pepper before being seared in a heavy skillet to develop a rich, caramelized crust. It is then transferred to a roasting pan and baked in a hot oven until the internal temperature reaches 120-125 degrees Fahrenheit for medium-rare doneness. After resting, a brown butter sauce is prepared by melting unsalted butter and slowly cooking it with whole garlic cloves until the butter foams and turns golden brown, which imparts a nutty flavor amplified by the roasted garlic.

The technique ensures the tenderloin remains juicy with a crisp seared exterior and a smooth garlic-butter sauce that adds depth. This dish serves well as the centerpiece of a special meal and pairs nicely with roasted vegetables or potatoes. The rested roast allows the juices to redistribute, maintaining tenderness when sliced.

Ingredients

Servings
  • 1 (5 to 6 pound) beef tenderloin
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 teaspoon white pepper
  • 1/2 cup butter unsalted
  • 4 cloves garlic

Instructions

  1. Preheat oven to 450 degrees. Heat a heavy 12-inch skillet over medium-high heat.
  2. Cut roast in half if necessary to fit in a 12-inch skillet. One half of the roast should have a thinner end that tapers off. Fold the thin end up against the rest of the roast and use kitchen twine to tie it together, creating an even thickness in the roast. Season the roast generously with salt, black pepper, and white pepper.
  3. Sear the roast in the heavy skillet on all 4 sides until browned, about 3 to 4 minutes per side.
  4. Transfer to a roasting pan or 9x13 pan and roast in the preheated oven until desired done-ness is reached, 120-125 degrees for medium-rare, about 30 minutes. Let meat rest, covered loosely with aluminum foil, for 10 minutes before serving.
  5. While meat is resting melt butter in a small sauce pan over medium heat. Once butter melts, add in whole garlic cloves. Continue to cook over medium heat until butter begins to bubble and foam, stirring constantly. The color of the butter will begin to change. As soon as it gets close to reaching a dark golden brown, remove from heat and pour into a heat-safe container. Remove garlic cloves.
  6. Slice the roast into 1/2-inch to 3/4-inch slices and drizzle with brown butter. Serve immediately.
